Roast cauliflower salad

Add this quick and easy side dish to your next get together. Healthy and delicious, it would also be great with some goats cheese or feta crumbled over the top, or you could also swap the raisins for some pomegranate seeds.

what you need

  • a whole cauliflower, cut into florets
  • salt and pepper
  • extra virgin olive oil
  • ras el hanout or similar Middle Eastern type seasoning
  • baby spinach and/or rocket leaves
  • flaked almonds
  • raisins
  • fresh parsley, finely chopped
  • fresh mint, finely chopped
  • sherry vinegar
  • seeded mustard

what to do

Heat the oven to very hot, about 220C. Line a baking sheet with baking paper and spread the cauliflower florets out in a single layer. Season well with salt, pepper, and ras el hanout, and drizzle a good amount of olive oil on top. Roast until just cooked but still a little crunchy.

 

When the cauliflower has cooled spread out on a bed of the spinach and rocket, and sprinkle the almonds and raisins over the top. For the dressing whisk the herbs, some olive oil, sherry vinegar, salt and pepper in a jug and spoon over the top.
