I say midweek because this is the kind of get-home-from-work-on-a-Thursday dinner I fall back on A LOT, but this is an any time any day winner, just twenty minutes in a hot oven with something green thrown in alongside. Add some garlic butter for keto flavour, or keep it light with some lemon slices on top, either way it’s a flavour filled super quick meal that scores all the points for nutrition and goodness. Asparagus is my pick simply because it comes out crispy in the time it takes for the salmon to cook. Zero effort. Big win.
And did I mention the minimal mess and clean up?

what you need
- salmon fillets
- salt and pepper
- olive oil
- flavouring of your choice: dried herbs, chilli, ras el hanout, garlic herb salt, thin lemon slices, etc
- fresh asparagus, ends trimmed
what to do
Heat your oven to hot, about 220C. Line a baking tray and pop a grill or baking rack on top. Season the salmon well, place on the rack, with the asparagus spread out on the rack. Season the asparagus with salt and pepper and a drizzle of olive oil, and roast for around twenty minutes, fifteen if you like your salmon more on the pink side. Bon apetit!
