A trio of the best tomato salads

I could go on and on and on about how amazing tomatoes are, how versatile, how sublimely perfect they are when old school heirloom varieties are ripened in the Mediterranean sun, how late I was to the tomato appreciation game, and how I couldn’t live without them, but I won’t. Instead I’ll just give you my three favourite tomato salads of all time.

Just make sure to buy the very best tomatoes you can.

And if you have home grown heirlooms you already know you’ve hit the jackpot.

The perfect dressing for a tomato salad:

the best quality extra virgin olive oil you can get your hands on, sea salt & freshly cracked black pepper, and a small drizzle of either red wine or balsamic vinegar. Fig vincotto is divine if you can find it.

panzanella

  • tomatoes
  • stale bread, preferably sourdough or ciabatta style, broken into chunks and toasted well to dry out
  • lots of fresh torn basil
  • optional: cheese, sliced red onions, olives, capersΒ 

caprese

  • tomatoes
  • basil
  • bocconcini

Dalmatian style {a.k.a. the best tomato salad ever}

  • tomatoes {specifically, the ones from my mother in law’s garden πŸ˜‰ }
  • thin slivers of garlic
  • parsley, thinly shredded

*I don’t add any vinegar to this one, when the tomatoes you have are bursting with flavour all they really need is some excellent olive oil and a little salt.
