Still trying to be as vegetarian as I can, family BBQ’s would initially seem the most challenging, what with the assumption that a BBQ means red meat. Instead BBQ’s are a great way to get some delicious grilled veggies as well as salads and sides that are vegetarian and often vegan too. These skewers were so good that they easily outshone the meat options they were served with.
Feel free to skip the haloumi for a vegan option and you could also go for some eggplant and capsicum in keeping with the Mediterranean flavour.
what you need
- two packets of haloumi, cut into large cubes
- 2 large zucchini, thickly sliced
- one punnet cherry tomatoes
- 350 g whole button mushrooms or large mushrooms,quartered
- one large red onion, cut into large cubes
- marinade: olive oil, salt, and pepper {optional: minced garlic, lemon zest, chilli}
what to do
- Preheat your BBQ or grill to high
- Thread the vegetables and haloumi on the skewers
- When the BBQ is ready grill the skewers until nicely charred and cooked through, turning often to cook evenly. Baste all over with the marinade as it cooks, and drizzle any leftover marinade over the skewers when they’re cooked.
